A rare delicacy passed down through 15 generations! From the 100-year-old Ishizuka Farm "Jigozaemon" in Tsuruoka City, Yamagata Prefecture, comes this heirloom flat black soybean (hirakuromame).
Tsuruoka's winters are extremely cold, with fields covered in heavy snow. This extreme cold naturally reduces pathogens and pests in the soil. The farmers adhere to **"special cultivation methods," applying homemade soybean stalk compost that has been aged for 2 years, and strictly reducing chemical fertilizers by 80% and pesticides by 50%**. Seeds passed down through generations and fertile soil cultivate premium black soybeans with an intensely rich bean flavor, sweetness, and soft, glutinous texture!
